This is just from under the lid of the Quaker's oatmeal, but they are really good! I only made half of this recipe.
Ingredients:
- 1 cup (2 sticks) margarine or butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 1 and 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp. salt (optional)
- 3 cups Quaker's Oats (quick or old fashioned)
- 1 cup raisins
- Heat oven to 350
- Beat together margarine and sugars until creamy
- Add eggs and vanilla, mix well.
- Add combined flour, baking soda, cinnamon and salt; mix well.
- Stir in oats and raisins; mix well.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 10 to 12 minutes or until golden brown.
- Cool 1 minute on cookie sheet, move to wire rack.
- Yield=about 4 dozen
